Super Moist Spice Cake
Super Moist Spice Cake includes and 1/2 cups all-purpose flour, spooned & leveled, baking powder, baking soda. Total time: 95 minutes. Serves 12.
Ingredients
2 and 1/2 cups all-purpose flour, spooned & leveled
2 tsp baking powder
1 tsp baking soda
½ tsp salt
1 and 1/2 teaspoon ground cinnamon
1 tsp ground ginger
½ tsp ground nutmeg
½ tsp ground cloves
1 cup vegetable oil
1 and 3/4 cup packed light or dark brown sugar
1 cup unsweetened applesauce
4 large eggs
2 tsp pure vanilla extract
1 cup shredded apple, or shredded carrot/zucchini
optional: 1 Tablespoon unsulphured or dark molasses, not blackstrap; I prefer Grandma’s brand
¼ cup unsalted butter, cut into 4 slices
8 oz full-fat brick cream cheese, softened to room temperature
2 and 1/2 cups confectioners’ sugar
1 tsp pure vanilla extract
pinch of salt
optional, for garnish: sprinkle of ground cinnamon or nutmeg
